Kaiserschmarrn — this sweet, golden-brown temptation — is more than just a dessert: it’s a piece of history, and above all, pure delight.

But before we get to the recipe, we’d love to share a little of the story behind Kaiserschmarrn.

 

Kaiserschmarrn is said to have once been prepared for Emperor Franz Joseph I of Austria. Legend has it that the dessert was originally intended as a simple meal for mountain farmers — but the Emperor enjoyed it so much that it was given his name. Since then, Kaiserschmarrn has secured its place in Austrian hearts and kitchens, and today it’s a symbol of comfort and culinary pleasure.

 

Recipe

Ingredients:

  • 4 eggs
  • 200 ml milk
  • 125 g flour
  • 1 pinch of salt
  • 2 tbsp sugar
  • 50 g butter
  • 2 tbsp raisins (optional)
  • Icing sugar for dusting
  • Apple sauce or stewed plums to serve

 

First steps

  • Separate the eggs.
  • Beat the egg whites with a pinch of salt until stiff and set aside.

 

Batter

In a large bowl, beat the egg yolks with the sugar until frothy. Then stir in the flour and milk alternately until you have a smooth batter. Carefully fold in the whipped egg whites to keep the batter light and airy.

 

Baking

  • Heat the butter in a large pan.
  • Once the butter has melted, pour in the batter and cook over medium heat until the underside is golden brown.
  • Then place the pan in a preheated oven at moderate heat (fan oven approx. 180°C) for 10–12 minutes, until the Kaiserschmarrn is lightly golden.

 

Flip and tear

Remove the Kaiserschmarrn from the oven and tear it into irregular pieces using two spoons.

If you like, add the raisins at this point and place the pan back into the still-warm oven for another minute.

 

Serving

Dust generously with icing sugar and serve with apple sauce or stewed plums.
